Sweet Potato Fries

I had an extra sweet potato left over from baking the cake and my mom was craving sweet potato fries so I came up with this recipe.
Servings: 4-6
Total time: 20 minutes

Ingredients:
1 large sweet potato, sliced into strips
1/4 c olive oil
8 T brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
 
Directions:
Preheat the oven to 400 degrees. Line a baking sheet with foil.

Pour the olive oil into a shallow dish. Mix the brown sugar, cinnamon, and nutmeg in a shallow bowl. Coat the sweet potato slices in the olive oil, then dip in the sugar mixture to coat. Place the slices on the foiled sheet. Bake for about 10 minutes or until soft.

You may need to use more oil and spices depending on the size of your potato.

  1. My family tried this recipe today! We made a few changes. For one thing, we used five spice powder in place of the cinnamon and nutmeg. We also attempted to cook them in the grill. First, we put the slices in the microwave for a few minutes at 70% power to make sure they'd cook all the way through (I think this may have been a bad idea). Once we had coated them, we put them on a broiler pan on the shelf in the grill (it gets up to about 450-500 degrees). They came out kind of mushy, but were delicious. We cooked two whole potatoes and ate ALL of them!
