Mediterranean Hummus Pizza

I can't remember where I saw the idea for using hummus instead of tomato or garlic sauce on a pizza but it sounded so good! I used tomatoes and peppers from my garden but feel free to mix it up. The tomato and basil flavored feta was amazing and really kicked it up a notch.

Total time: 25 minutes

Ingredients:
1 chicken breast, cut into small pieces (substitute tofu or seitan to make it veg)
2 tsp Italian seasoning
1 whole wheat store-bought or homemade pizza crust
3/4 c hummus
1/2 of 1 small yellow pepper
1/2 of 1 small green pepper
3 sun-dried tomato quarters, diced
1/2 c shredded low fat Italian cheese mix (use Daiya mozzarella to make it vegan)
1/4 c crumbled low fat feta cheese (I used a tomato and basil seasoned blend. Unfortunately I don't know of any good vegan substitutes, though.)

Directions:
Preheat the oven as directed by the recipe or package of pizza dough. Saute the chicken with the Italian seasoning in a medium skillet over medium-high heat until browned. Prepare the pizza dough as necessary. Spread the hummus out evenly over the dough, reaching almost to the edges. Top with the chicken, peppers, tomatoes, and cheeses. Bake as directed or around 425 degrees Fahrenheit for 12 minutes.
