Biscuits and Gravy

This is one of the mainstays of comfort food that has been off of my menu for several years now. I was looking around in an Amish cookbook and figured I could easily modify this recipe to make it a little healthier and in line with my dietary needs.



Servings: 4 - three small biscuits each
Total time: 20 minutes

Ingredients:
½ c trans fat-free shortening
1 ¼ c + 3 T white whole wheat flour
1 ½ tsp baking powder
1/8 tsp salt
1 c + 1/2 c unsweetened soy milk
1 lb lean ground turkey (93% fat free)
Black pepper to taste

Directions: 
Preheat oven to 450 degrees. Stir together flour, baking powder, and salt. Cut in shortening with pastry blender or fork. Stir in ½ c milk, just enough to make sticky. Drop by teaspoonful onto greased cookie sheet. Bake for 10-13 minutes or until biscuits are golden brown. Brown meat but do not drain the fat. Add 3 T flour and stir until smooth over medium heat. Slowly add approximately 1 c milk. Continue to stir over heat until it boils. Add pepper to taste. Pour over biscuits and eat.

The biscuits really keep their shape so you can flatten them out a bit

I thought the original ratio of meat to gravy was too high so I've modified the recipe before posting
