Homemade Ketchup

So the next time we needed ketchup, I planned on buying some that didn't have any high fructose corn syrup. Then my local farmer's market posted this recipe for homemade ketchup that sounded very easy and yummy. It is! It's very flavorful and hard to remember that it's ketchup and not a dip.

Servings: 20+ (about 2 cups)
Total time: 30 minutes

Ingredients:
1 tsp olive oil
1 T minced onion or 1 small onion, finely minced
1 large garlic clove, finely minced
1⁄4 c sugar
1⁄2 tsp ground mustard
1⁄2 tsp ground ginger
1⁄4 tsp cayenne pepper
1⁄2 tsp paprika 

pinch of ground cinnamon
1⁄4 c apple cider vinegar
2 T tomato paste
16 oz crushed tomatoes or tomato sauce
Ground black pepper to taste
 
Directions:
In a medium sauce pan over medium-low heat, saute the onion and garlic in the olive oil. Add the sugar, spices, vinegar, and tomato paste. Cook for 5 minutes or until it starts to thicken. Add the tomato sauce and simmer for another 15 minutes, stirring occasionally. Add the mixture to a blender or food processor and blend until smooth. Let cool to room temperature before serving. Store in the refrigerator.

You could add a jalapeno pepper if you want it hotter
