Lazy Egg Scramble

This is a great light breakfast or snack. You can substitute the veggies for any you have on hand. I used these because I already had them cut up for salads. You could also make it into an omelet or add fresh herbs if you wanted to be fancy instead of lazy.

Eggs are a good source of protein and the vegetables have a multitude of nutrients, especially Vitamins C and A.

Servings: 1
Total time: 10 minutes

Ingredients:
Non-stick spray, if necessary
2 eggs (or 4 egg whites or some diced up extra firm tofu)
Black pepper
About 1/8 c each:
Diced tomato
Diced cucumber
Diced red pepper
Shredded carrot

Directions:
Heat a small pan over medium heat. Spray a thin layer of cooking spray if you aren't using a non-stick pan. Add two whole eggs (or 3-4 whites) and black pepper to taste. Stir the eggs around to scramble them up. Mix in the tomato, cucumber, red pepper, and carrots. Cook until the eggs are thoroughly done and no longer shiny, about 5 minutes.

Just throw everything in. It's so easy!

Ready in less than 10 minutes
